You only get out what you put in, as our mothers always told us. That’s why we only put the best possible ingredients into our brownies. It just wouldn’t feel right to use anything else.
Apart from the cocoa, which doesn’t grow very well in Yorkshire, almost all our ingredients come from around our bakery in Ilkley. We work with farmers who share our belief in ethical, organic produce which we use when available.
Our eggs, for example, are from Mr Paxton. He’s a fantastic character who really cares about his hens. They’re looked after beautifully, and it shows in the eggs.
The local butter’s fantastic too. And our pure, plain flour is made with organic wheat.
The cocoa has to come a bit further, but it’s also organic, and we insist on Fairtrade. What sort of person wouldn’t?
(Oh, and we don’t use any nuts at all. So no worries on that score. But I must add I do invent recipes which do contain nuts in the same kitchen area.)
